Peter’s gin in Florence
The first distillery in Italy dedicated exclusively to Gin is born in Florence. Peter in Florence is the first London Dry Gin produced only with juniper and iris petals made in Tuscany, thanks to a dedicated still, which uses steam infusion.
Only juniper and iris petals from organic farming are used, together with spring water, purified and treated, certified spices and a dedicated still. The Podere Castellare di Pelago, Eco Resort set on the Florentine hills, is the home of Peter in Florence, the first London Dry Gin produced with almost exclusively Tuscan ingredients (with the exception of some botanicals not available in Italy) where the best raw materials grow.
Podere Castellare di Pelago is the first specialized micro-distillery in Italy, and also a gin laboratory where you can see and touch the herbs used to make the gin, which grow in a botanical garden around the farmhouse, product training and guided tastings.
Peter in Florence is a tribute to Florence, the “gin of elegance”: the centre of iris, the icon of the city, of which not only the root is used, but also the rarely used petals. This classic gin is in keeping with the rules of London Dry Gin, but brings some innovation thanks to the use of various botanicals. It comprises 14 essences from juniper to iris, fresh bergamot garlic, dried lemon, green cardamon seeds, rose berries, lavender flowers and fresh rosemary. All from local specialized organic micro-producers. It also contains roots from France, coriander bark from China, Moroccan coriander, sweet almonds from Spain and grains of Paradise from West Africa.
